Sundried Tomato & Ricotta Pasta
Serves 1
Noodles:
Ingredients:
1 cup sun dried tomatoes with oil
½ cup of cherry tomatoes, halved
1 shallot, finely chopped
3 garlic cloves, minced
1 cup pureed tomatoes
150 g ricotta cheese
½ teaspoon crushed red pepper flakes
1 teaspoon smoked paprika
Salt and pepper to taste
Cooking Instructions:
Heat the oil from the sun-dried tomatoes in a large skillet.
Add diced shallot and minced garlic, stir-fry until fragrant.
Stir in sun-dried tomatoes, cook for 5 minutes.
Season with salt, pepper, red pepper flakes and smoked paprika.
Add in cherry tomatoes and sauté for 1 minute.
Into the pan, add the pureed tomatoes and simmer for 5 minutes.
After 5 minutes, add in the ricotta cheese and mix to incorporate it into the sauce.
Stir in your UPGRAIN® Mee Pok noodles.
Serve immediately. Enjoy!
