
Creamy Carbonara
Serves 4
Pasta substitute:
1 pack of UPGRAIN® ½-carb mee kia(280g)
Sauce and ingredients:
1 tbsp Olive Oil
4 cloves garlic minced
100g onion small diced
200g bacon or pancetta, diced
50g mushrooms, diced
1 tsp garlic powder
1tsp onion powder
1 pinch of pepper
50g cream cheese
2 egg yolks
120g heavy cream
50g cheddar cheese
Milk to loosen
Garnish:
Spring onion & Grated Parmesan as desired
Cooking Instructions:
Sauté onion and garlic in olive oil until fragrant and translucent.
Add bacon and mushrooms; fry until mushrooms release water.
Add garlic and onion powder with pepper into the pan.
Reduce heat, add cream cheese, mix thoroughly.
Mix egg yolks and cream in a separate bowl until uniform.
Combine cheddar cheese with egg yolk mixture.
Pour mixture into pan, stirring well; remove from heat.
Boil and drain noodles, add to pan with some pasta water.
Stir until thickened, adjust with more pasta water if needed.
Plate, garnish with parsley and parmesan.
