
Bread & Butter Pudding

Bread & Butter Pudding
Serves 1
Brioche bread:
Sauce and ingredients:
3 Eggs
2 ½ cups Milk
½ cup Sugar
1 teaspoon Vanilla extract
1 tablespoon Lemon zest
2 tablespoons Butter (melted)
1 cup Fresh fruit (for topping - mix of blueberries, raspberries, strawberries, diced mangoes)
Cooking Instructions:
Grease your baking dish.
Cube and layer the brioche in the dish, brush some melted butter on top.
In a large bowl, whisk together eggs, milk, sugar, vanilla extract, and lemon zest (if using).
Pour the custard over the brioche, and soak for 20-30 minutes so the bread really absorbs all the flavour.
Scatter your chosen fruit over the top.
Bake at 350°F for 40 minutes, or until custard is set and the top is golden brown.
Let cool slightly. Enjoy warm or at room temperature!
